Without further ado, let’s get to it!

- 6 large ripe tomatoes, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 4 cups vegetable broth
- Salt and pepper to taste
- 4 eggs
- 4 slices of bread

1. Heat olive oil in a large pot over medium heat. Add diced onions and minced garlic and sauté until tender.

2. Add diced tomatoes and cook until they start to break down, stirring occasionally.

3. Pour in the vegetable broth and bring the soup to a boil. Then, reduce the heat and simmer for about 10-15 minutes. Add salt and pepper to taste.

4. While the soup is simmering, prepare the poached eggs. Fill a small pot with water and bring it to a boil. Once it's boiling, reduce the heat to a simmer and crack an egg into the water. Let it cook for about 3-4 minutes, until the whites are set but the yolk is still runny. Repeat for the remaining eggs.

5. Toast or grill the slices of bread until golden brown.

6. Divide the soup into four bowls and place a poached egg on top of each. Serve with the toasted bread on the side.
